Red Velvet Nourishing Herbal Chia Bowl

The past couple of months have been a magical whirlwind of new yoga classes and new projects for me. I’m spending a lot of time in creative energy and being in a place of serving, but also balancing this action with my need for self-care and connection with my loved ones.

Keeping your internal energy just as nourished as your external energy is an important part of showing up with maximum happiness in life.

In honor of this heart centered approach to work, today’s recipe is all about fostering the inner glow while building up my energy stores – because there’s so much more goodness to come!

Red Velvet Nourishing Herbal Chia Bowl

1 cup water
¼ cup full fat coconut milk
1 Lovebeet
1 pitted date
5 drops Omica Organics vanilla stevia

Blend these ingredients until smooth. Then add in 3 tbs chia seeds, cover and refrigerate several hours or overnight.

Just before eating, stir in:
2 tbs GT’s CocoYo Vanilla Coconut Yogurt
½ tsp red asparagus root powder

Then add all the fun toppings! Edible flowers, bee pollen, hemp seeds, cacao nibs, fresh berries or other fruit – whatever your heart desires.


Beets not only make this a pretty pinkish red color, it also adds some serious nutrient content. Even a small amount of beets can improve blood flow and increase physical endurance and stamina. This is due to nitric oxide formed in the body when consumed.

Asparagus root is a tonic herb used to purify the lungs, which leads to benefits for the skin. It’s an adaptogen, meaning it regulates the body’s ability to withstand stress. It is sometimes called “the flying herb” because it helps you feel uplifted.

A word on coconut yogurt: many brands are thickened with fillers. GT’s is not, it is literally coconut and live cultures, and is currently my favorite. On any of the specific brands I share in the recipe, I have no affiliation. I just love their products.
